The mag has been going through some tough times lately and subscriptions aren't enough to keep it going. They need more advertisers. Lussekatte Recipe!

Here it is!

1-1/2 sticks butter
2 cups whole milk
50 grams of fresh yeast (almost 3 cubes)
1/4 tsp. salt
1 cup sugar
1 gram saffron, crushed
5 cups of flour
Raisins if you like them


-Melt all of the butter and then add all of the milk to it

-When the butter and milk are at room temp., smoosh the yeast into small pieces and stir until all the pieces dissolve completely in liquid.

-Add sugar, salt & crushed saffron. Stir.

-To make the dough, start off by adding 3 cups of flour (and raisins if you want) to the mixture. Once flour is mixed thoroughly, add another cup.

-Keep adding flour & mixing/kneading dough until it no longer sticks to your hands.

-Cover and leave to rise for 45 minutes.

-Roll our small balls of dough (small meatball size) into snakes. Curl borth ends to meet in the middle, like an "S" shape (this is called lussekatt in Swedish).

- Let buns rise for another 40 minutes or so.
-Brush with egg and bake for 5-8 minutes at 375 degrees until they are light brown.

The buns turn out best if they are baked on a light-colored pan; dark pans seem to burn the bottoms.

Today is St. Lucia (AKA St. Lucy)'s feast day. In Sweden, The oldest girl in the family wakes up early to make the rest of the family coffee and St. Lucia Buns. Also known as Lucicata (sp?). Then the girl dresses up in a white robe and puts a wreath with candles in it and serves the Lucicata and coffee to her family. Every year, my family makes yummy Lucicata and one year, when I was younger, my mom and I woke up early so I could dress up than my mom jumped back into bed and I brought up coffee and Luciata to my parents. :) We have some polaroid pictures of me and my Kirsten American Girl Dressed up in the Swedish St. Lucia garb.

Later, I'll post my mommy's yummy recipe for Lucicata. They are SOOO yummy! :)

St. Nicholas



O good holy Nicholas,
you who brought joy to children,
put in my heart the spirit of childhood
about which the Gospel speaks.

Today is St. Nicholas' feast day. There is an article about him at americancatholic.org.
This one is interesting; St. Nicholas and the Origin of Santa Claus. You might want to check out the rest of the site as a way for kids to learn about St. Nicholas and the customs and traditions surrounding his feast day.

According to legend, St. Nicholas would sneak into someone's house (some say through the chimney) and put money in their shoes. So in my family, we kids always put our shoes out the night before Dec. 6. St. Nicholas fills them with candy during the night. :) We usually get chocolate coins, a candy cane to signify a bishop's crozier, and one or two other things. What do you and you family do on this special day? The same thing, or something different? Tell us about it!
